How To Make Sunflower Seed and Beet Salad

A refreshing and healthy salad with the sweetness of beets and crunchy sunflower seeds.

Ingredients

  • 3 medium beets, peeled and cubed
  • 1 cup of baby spinach leaves
  • 1/4 cup of sunflower seeds
  • 1/4 cup of crumbled feta cheese
  • 2 tbsp of olive oil
  • 1 tbsp of apple cider vinegar
  • 1 tsp of honey
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F.

  2. Toss the beet cubes with olive oil, salt, and pepper. Place them on a baking sheet and roast for 25-30 minutes, until tender.

  3. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and pepper.

  4. In a salad bowl, combine the roasted beets, baby spinach leaves, sunflower seeds, and crumbled feta cheese.

  5. Drizzle the dressing over the salad and toss well to combine.

  6. Serve and enjoy!
