How To Make Vegan Air Fryer Stuffed Bell Peppers Recipe

Ingredients

  • 4 large bell peppers
  • 1 cup of cooked quinoa
  • 1 cup of canned black beans, drained and rinsed
  • 1/2 cup of corn
  • 1/2 cup of diced tomatoes
  • 1/4 cup of diced onion
  • 1/4 cup of chopped cilantro
  • 1 tbsp of olive oil
  • 1 tbsp of chili powder
  • 1 tsp of cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 375°F (190°C).

  2. Cut off the tops of the bell peppers and remove the seeds and membranes.

  3. In a mixing bowl, combine the cooked quinoa, black beans, corn, tomatoes, onion, cilantro, olive oil, chili powder, cumin, salt, and pepper.

  4. Stuff each bell pepper with the mixture and place them in the air fryer basket.

  5. Cook for 15-20 minutes or until the bell peppers are tender and the filling is cooked through.

  6. Serve and enjoy!
