How To Make Quick Quinoa Tabbouleh

Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cucumber, diced
- 2 tomatoes, diced
- 1/2 red onion, finely chopped
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint leaves, chopped
- Juice of 1 lemon
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions

Rinse quinoa under cold water. In a medium saucepan, bring water to a boil. Add quinoa and reduce heat to low. Cover and cook for 15 minutes or until water is absorbed and quinoa is fluffy. Remove from heat and let cool.

In a large bowl, combine cucumber, tomatoes, red onion, parsley, mint, lemon juice, and olive oil. Season with salt and pepper.

Add cooked quinoa to the bowl and toss everything together until well combined.
