How To Make Quinoa Salad with Shredded Greens & Raisins

Ingredients
- 1 cup quinoa
- 2 cups water
- 2 cups shredded greens (such as kale, spinach, or romaine lettuce)
- 1/2 cup raisins
- 1/4 cup sliced almonds
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper, to taste
Instructions

In a saucepan, bring the water to a boil. Add the quinoa and reduce heat to low. Simmer for 15-20 minutes, or until the quinoa is cooked and the water is absorbed. Remove from heat and let it cool.

In a large bowl, combine the cooked quinoa, shredded greens, raisins, and sliced almonds.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the quinoa mixture and toss to combine.

Serve the quinoa salad chilled or at room temperature.
