How To Make Zucchini and Basil Soup
A refreshing and healthy soup made with fresh zucchini and basil.
Serves:
Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups zucchini, chopped
- 4 cups chicken or vegetable broth
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper, to taste
- 1/2 cup heavy cream (optional)
Instructions

Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until soft.

Add zucchini and broth and bring to a boil. Reduce heat and let simmer for 10-15 minutes or until zucchini is tender.

Using an immersion blender or transferring to a blender, puree soup until smooth.

Stir in chopped basil and season with salt and pepper to taste. Optional: stir in heavy cream for a creamier soup.

Serve hot and enjoy!
