How To Make Zucchini and Basil Soup

A refreshing and healthy soup made with fresh zucchini and basil.

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups zucchini, chopped
  • 4 cups chicken or vegetable broth
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper, to taste
  • 1/2 cup heavy cream (optional)


  1. Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until soft.

  2. Add zucchini and broth and bring to a boil. Reduce heat and let simmer for 10-15 minutes or until zucchini is tender.

  3. Using an immersion blender or transferring to a blender, puree soup until smooth.

  4. Stir in chopped basil and season with salt and pepper to taste. Optional: stir in heavy cream for a creamier soup.

  5. Serve hot and enjoy!
