How To Make Creamy Corn Chowder Recipe
A delicious comforting bowl of creamy corn chowder made with sweet corn, potatoes, and bacon.
Serves:
Ingredients
- 4 slices of bacon, chopped
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 cups of sweet corn kernels
- 1 potato, peeled and diced
- 4 cups of vegetable broth
- 1 cup of heavy cream
- 1/2 tsp of thyme
- Salt and pepper, to taste
Instructions

In a large pot, cook the chopped bacon until crisp. Set the bacon aside and leave the bacon grease in the pot.

Add the diced onion and minced garlic to the pot and stir. Cook until the onions become transparent.

Add the sweet corn kernels and diced potato to the pot. Stir and cook for 2-3 minutes.

Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 20-25 minutes, until the potatoes are soft.

Use an immersion blender or transfer the mixture to a blender to puree until smooth.

Pour the mixture back into the pot and add the heavy cream, thyme, and salt and pepper, to taste.

Let the chowder simmer for 5-10 minutes until it thickens and the flavors meld together.

Serve hot, topped with chopped bacon.
