Ingredients

  • 2 ripe avocados, peeled and pitted
  • 1 cup vegetable broth
  • 1 cup plain Greek yogurt
  • 2 garlic cloves, minced
  • 1/4 cup chopped cilantro
  • 2 tbsp lime juice
  • Salt and pepper, to taste

Instructions

  1. In a blender, combine the avocado, vegetable broth, Greek yogurt, garlic, cilantro, and lime juice. Blend until smooth.

  2. Season with salt and pepper to taste.

  3. Chill the soup in the refrigerator for at least 2 hours.

  4. Serve cold, garnished with additional cilantro if desired.
