How To Make Cold Beet Borscht Soup Recipe
A refreshing and healthy soup made with beets, vegetables, and sour cream.
Serves:
Ingredients
- 3 medium beets, peeled and chopped
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups of vegetable broth
- 1 cup of chopped carrots
- 1 cup of chopped celery
- 1 tsp of salt
- 1 tbsp of apple cider vinegar
- 1 cup of sour cream
- 1/4 cup of chopped fresh dill
Instructions

In a large pot, combine beets, onion, garlic, and vegetable broth. Bring to boil and simmer for 30 minutes or until beets are tender.

Add carrots, celery, salt, and apple cider vinegar. Simmer for another 30 minutes.

Remove from heat and let cool. Transfer to a blender or food processor and blend until smooth.

Chill in the refrigerator for at least 1 hour.

Serve with a dollop of sour cream and chopped fresh dill.
