Ingredients

  • 6 ripe medium tomatoes, roughly chopped
  • 1 red bell pepper, roughly chopped
  • 1 cucumber, roughly chopped
  • 1 small red onion, roughly chopped
  • 2 garlic cloves, minced
  • 3 tbsp of extra-virgin olive oil
  • 2 tbsp of red wine vinegar
  • 1 tsp of salt
  • 1/2 tsp of black pepper
  • 2 cups of cold water

Instructions

  1. Add all vegetables and garlic to a blender and puree until smooth.

  2. Add olive oil, vinegar, salt, pepper, and cold water; blend until well combined.

  3. Pour gazpacho into a large bowl and Chill in the fridge for at least 30 minutes.

  4. Serve chilled and garnished with chopped vegetables and a drizzle of olive oil.
