Ingredients
- 2 large beets, peeled and grated
- 1 onion, finely chopped
- 2 carrots, peeled and grated
- 3 potatoes, peeled and diced
- 4 cups vegetable broth
- 1 cup cabbage, shredded
- 1 can diced tomatoes
- 1 tbsp tomato paste
- 2 cloves garlic, minced
- 2 bay leaves
- 1 tsp dried dill
- 1 tsp dried parsley
- Salt and pepper to taste
- Sour cream and fresh dill for garnish
Instructions

In a large pot, heat some oil and sauté the onions until translucent. Add the grated beets and carrots, and cook for about 5 minutes.

Add the potatoes, vegetable broth, tomatoes, tomato paste, garlic, bay leaves, dried dill, and dried parsley. Bring to a boil, then reduce heat and simmer for 1.5 hours, or until the vegetables are tender.

Stir in the shredded cabbage and cook for an additional 10 minutes.

Remove the bay leaves and season with salt and pepper to taste.
