How To Make Beet Soup

- 4 medium-sized beets, peeled and diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup water
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh dill for garnish

Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until they become translucent.

Add the diced beets to the pot and sauté for another 5 minutes, stirring occasionally.

Pour in the vegetable broth and water, then season with salt and pepper. Bring the mixture to a boil, then reduce heat and let it simmer for about 30-40 minutes, or until the beets are tender.
