  • 4 medium-sized beets, peeled and diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup water
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until they become translucent.

  2. Add the diced beets to the pot and sauté for another 5 minutes, stirring occasionally.

  3. Pour in the vegetable broth and water, then season with salt and pepper. Bring the mixture to a boil, then reduce heat and let it simmer for about 30-40 minutes, or until the beets are tender.

  4. Remove the pot from the heat and let it cool slightly. Then, using an immersion blender or a regular blender, blend the soup until smooth and creamy.

  5. Return the soup to the pot and heat it over low heat until warmed through. Adjust the seasoning if needed.

  6. Serve the beet soup hot, garnished with fresh dill.
