Ingredients
- 1 pound beef stew meat, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 4 beets, peeled and grated
- 4 cups beef broth
- 1 cup tomato sauce
- 1 tablespoon sugar
- 2 tablespoons red wine vinegar
- 1 bay leaf
- Salt and pepper to taste
- Sour cream and fresh dill for garnish
Instructions

In a large pot, heat the vegetable oil over medium-high heat. Add the beef stew meat and brown on all sides. Remove the beef from the pot and set aside.

In the same pot, add the diced onion, sliced carrots, sliced celery, and minced garlic. Cook until the vegetables are slightly tender, about 5 minutes.

Add the grated beets, beef broth, tomato sauce, sugar, red wine vinegar, bay leaf, and the reserved beef. Bring to a boil, then reduce heat to low and simmer, covered, for 2 hours.

Remove the bay leaf and season with salt and pepper to taste.
