  • 2 large ripe tomatoes, cut into chunks
  • 1 small red onion, thinly sliced
  • 1 English cucumber, sliced
  • 1 green bell pepper, seeded and sliced
  • 1/2 cup Kalamata olives
  • 4 oz feta cheese, crumbled
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano


  1. In a large bowl, combine the tomatoes, red onion, cucumber, bell pepper, and olives.

  2. In a small bowl, whisk together the olive oil, red wine vinegar, and oregano. Season with salt and pepper.

  3. Drizzle the dressing over the salad and toss to coat.

  4. Sprinkle the feta cheese over the top and serve.
