Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper
  • 6 cups of mixed greens
  • 1 red onion, sliced
  • 2 tomatoes, diced
  • 1 avocado, diced
  • 1/2 cup of corn kernels
  • 1/4 cup of chopped cilantro
  • 1/2 cup of BBQ sauce
  • 2 tablespoons of apple cider vinegar
  • 1 tablespoon of honey
  • 1 clove of garlic, minced
  • 1/4 cup of olive oil

Instructions

  1. Season the chicken with salt and pepper and grill for 6-7 minutes per side or until cooked through. Slice into strips.

  2. In a large bowl, mix together the mixed greens, red onion, tomatoes, avocado, corn, and cilantro.

  3. In a small bowl, whisk together the BBQ sauce, apple cider vinegar, honey, garlic, and olive oil.

  4. Add the chicken to the salad and drizzle with the BBQ dressing.

  5. Toss the salad until everything is evenly coated.
