How To Make Hemp Seed and Quinoa Salad

A healthy and delicious salad loaded with protein and essential nutrients from hemp seeds and quinoa.

Serves:

Ingredients

  • 1 cup cooked quinoa
  • 1/2 cup hemp seeds
  • 2 cups mixed greens
  • 1/2 red onion (diced)
  • 1/2 cup cherry tomatoes (halved)
  • 1 avocado (diced)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • salt and pepper to taste

Instructions

  1. Cook quinoa according to package directions and let cool

  2. In a large bowl, combine cooked quinoa, hemp seeds, mixed greens, red onion, cherry tomatoes, avocado, and parsley.

  3. In a small bowl, whisk together balsamic vinegar and olive oil. Pour over salad and toss to combine.

  4. Add salt and pepper to taste.
