A healthy and delicious salad loaded with protein and essential nutrients from hemp seeds and quinoa.

Ingredients
- 1 cup cooked quinoa
- 1/2 cup hemp seeds
- 2 cups mixed greens
- 1/2 red onion (diced)
- 1/2 cup cherry tomatoes (halved)
- 1 avocado (diced)
- 1/4 cup chopped fresh parsley
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- salt and pepper to taste
Instructions

Cook quinoa according to package directions and let cool

In a large bowl, combine cooked quinoa, hemp seeds, mixed greens, red onion, cherry tomatoes, avocado, and parsley.

In a small bowl, whisk together balsamic vinegar and olive oil. Pour over salad and toss to combine.
