How To Make Quinoa Salad with Avocado Mayo

Ingredients
- 1 cup quinoa
- 2 cups water
- 1 ripe avocado
- 2 tbsp lemon juice
- 2 tbsp mayonnaise
- 1 small red bell pepper, diced
- 1 small cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions

Rinse quinoa thoroughly under cold water. In a medium saucepan, bring water to a boil and add quinoa. Reduce heat, cover, and let simmer for about 15 minutes or until all water is absorbed. Fluff with a fork and let cool.

In a small bowl, mash the avocado until smooth. Add lemon juice, mayonnaise, salt, and pepper. Mix well to combine.

In a large mixing bowl, combine cooked quinoa, red bell pepper, cucumber, red onion, and cilantro. Pour the avocado mayo dressing over the salad and toss gently to coat all the ingredients.

Season with additional salt and pepper if needed. Serve immediately or refrigerate for a few hours before serving to allow the flavors to meld.
