How To Make Easy Prawn & Quinoa Salad

Ingredients
- 1 cup quinoa
- 2 cups water
- 1 pound prawns, peeled and deveined
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper, to taste
Instructions

In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is tender and the water is absorbed. Remove from heat and let it cool.

In a large skillet, heat the olive oil over medium-high heat. Add the prawns and cook for 3-4 minutes until they are pink and opaque. Remove from heat and set aside.

In a large bowl, combine the cooked quinoa, prawns, avocado, cherry tomatoes, red onion, and cilantro.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine.

Serve the salad chilled and enjoy!
