How To Make California Quinoa & Avocado Salad

Serves:

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup corn kernels
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water. In a saucepan, bring the water to a boil and add the quinoa. Reduce heat, cover, and simmer for 15-20 minutes or until the water is absorbed and the quinoa is tender. Let it cool.

  2. In a large bowl, combine the cooked quinoa, diced avocado, cherry tomatoes, corn kernels, red onion, and cilantro.

  3. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour the dressing over the quinoa mixture and toss to combine.

  4. Serve chilled or at room temperature.
