How To Make Red Quinoa and Avocado Salad

Ingredients

  • 1 cup red quinoa, rinsed
  • 2 cups water
  • 1 ripe avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lemon
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring water to a boil. Add red quinoa and reduce heat to low. Cover and simmer for 15 minutes or until quinoa is tender. Remove from heat and let it cool.

  2. In a large bowl, combine cooked quinoa, diced avocado, cherry tomatoes, red onion, and cilantro.

  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.

  4. Pour the dressing over the quinoa mixture and toss gently to coat.

  5. Serve the salad chilled and enjoy!
