How To Make Red Quinoa and Avocado Salad

Ingredients
- 1 cup red quinoa, rinsed
- 2 cups water
- 1 ripe avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lemon
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions

In a medium saucepan, bring water to a boil. Add red quinoa and reduce heat to low. Cover and simmer for 15 minutes or until quinoa is tender. Remove from heat and let it cool.

In a large bowl, combine cooked quinoa, diced avocado, cherry tomatoes, red onion, and cilantro.

In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.

Pour the dressing over the quinoa mixture and toss gently to coat.

Serve the salad chilled and enjoy!
