How To Make Quinoa, Pea & Avocado Salad

Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cup frozen peas
- 1 avocado, diced
- 1/4 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions

Rinse the quinoa under cold water. In a medium saucepan, bring the water to a boil and add the quinoa. Reduce heat to low, cover, and simmer for 15-20 minutes or until the quinoa is cooked and liquid is absorbed. Remove from heat and let it cool.

In a small saucepan, cook the frozen peas according to package instructions. Drain and set aside.

In a large bowl, combine the cooked quinoa, peas, diced avocado, red onion, and fresh cilantro.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the quinoa mixture and toss to combine.

Serve chilled or at room temperature.
