How To Make Grilled Pineapple with Coconut Ice Cream

A tropical treat with sweet grilled pineapple and creamy coconut ice cream.

Ingredients

  • 1 fresh pineapple, peeled and sliced into rounds
  • 1/4 cup honey
  • 1 tbsp coconut oil
  • 1 pint coconut ice cream
  • 1/4 cup shredded coconut flakes

Instructions

  1. Preheat grill to high heat.

  2. In a small bowl, mix together honey and coconut oil.

  3. Brush pineapple slices with honey mixture.

  4. Grill pineapple slices for 2-3 minutes on each side, until grill marks appear.

  5. Place grilled pineapple slices on plates and top with scoops of coconut ice cream.

  6. Sprinkle with shredded coconut flakes.

  7. Serve immediately.
