How To Make Grilled Vegetable Platter

A colorful and healthy grilled vegetable platter perfect for a summer bbq or as a side dish.

Ingredients

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 eggplant, sliced
  • 1/4 cup olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp garlic powder
  • Salt and black pepper to taste

Instructions

  1. Preheat grill to medium-high heat.

  2. In a small bowl, whisk together olive oil, balsamic vinegar, garlic powder, salt and black pepper.

  3. Place sliced vegetables on a large platter and brush with olive oil mixture on both sides.

  4. Grill for about 3-4 minutes on each side or until tender.

  5. Arrange grilled vegetables on the platter and serve.
