How To Make Grilled Vegetable Platter
A colorful and healthy grilled vegetable platter perfect for a summer bbq or as a side dish.

Ingredients
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 eggplant, sliced
- 1/4 cup olive oil
- 1 tbsp balsamic vinegar
- 1 tsp garlic powder
- Salt and black pepper to taste
Instructions

Preheat grill to medium-high heat.

In a small bowl, whisk together olive oil, balsamic vinegar, garlic powder, salt and black pepper.

Place sliced vegetables on a large platter and brush with olive oil mixture on both sides.

Grill for about 3-4 minutes on each side or until tender.

Arrange grilled vegetables on the platter and serve.
