A delicious vegetarian stir-fry made with crispy tofu, crunchy vegetables, and a flavorful teriyaki sauce.

Preparation: 15 minutes
Cooking: 20 minutes
Total: 35 minutes

Serves:

Ingredients

  • 1 block (14 oz) of extra-firm tofu
  • 3 tbsp cornstarch
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 1 bell pepper, sliced
  • 2 cups broccoli florets
  • 2 cloves garlic, minced
  • 1 tsp grated ginger

Instructions

  1. Drain and press tofu to remove excess water. Cut into cubes and coat with cornstarch.

  2. In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, and sesame oil.

  3. Heat vegetable oil in a large skillet or wok over high heat. Add tofu and cook until crispy, about 5 minutes. Remove from pan and set aside.

  4. Add onion, bell pepper, and broccoli to the same pan and cook for 3-4 minutes until slightly softened.

  5. Add garlic and ginger and cook for another minute.

  6. Pour in the teriyaki sauce and stir to coat the vegetables. Add the tofu back to the pan and stir to combine.

  7. Cook for another 2-3 minutes until the sauce has thickened and everything is heated through.

  8. Serve over rice or noodles.
