How To Make Vegan Slow Cooker Teriyaki Tofu Recipe

Tender cubes of tofu drenched in a savory-sweet teriyaki sauce, cooked to perfection in a slow cooker.

Ingredients

  • 1 block of extra firm tofu, drained and cubed
  • 1/2 cup of low-sodium soy sauce
  • 1/4 cup of water
  • 1/4 cup of maple syrup
  • 2 tablespoons of rice vinegar
  • 2 teaspoons of minced garlic
  • 1 teaspoon of ground ginger
  • 1/4 teaspoon of black pepper
  • 3 tablespoons of cornstarch
  • 3 tablespoons of water
  • Rice and steamed vegetables, for serving

Instructions

  1. In a slow cooker, whisk together soy sauce, water, maple syrup, rice vinegar, garlic, ginger, and black pepper.

  2. Add cubed tofu to the sauce mixture, and stir to coat.

  3. Cover and cook on low for 4 hours.

  4. In a small bowl, whisk together cornstarch and water until smooth. Add the cornstarch mixture to the slow cooker and stir to combine. Cook for an additional 15-20 minutes until the sauce thickens.

  5. Serve teriyaki tofu over rice and steamed vegetables.
