How To Make Mediterranean Stuffed Bell Peppers

Ingredients
- 4 bell peppers, tops removed and seeds removed
- 1 cup cooked brown rice
- 1 cup cooked chickpeas
- 1/2 cup diced onion
- 3 cloves garlic, minced
- 1/2 cup diced tomatoes
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions

Preheat oven to 375°F.

In a skillet, heat olive oil over medium heat and sauté onion until soft. Add garlic and cook for another minute.

Mix in cooked rice, chickpeas, diced tomatoes, feta cheese, parsley, and mint. Stir until well combined.

Season with salt and pepper to taste.

Stuff each pepper with the mixture and place in a baking dish.
