How To Make Easter Brunch Hash Browns Recipe

Ingredients

  • 4 medium sized potatoes, peeled and diced
  • 1/2 red bell pepper, diced
  • 1/2 yellow onion, diced
  • 1/2 cup diced ham
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 eggs
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat.

  2. Add diced potatoes and let cook for 10-12 minutes, stirring occasionally until potatoes are golden and tender.

  3. Add onions and peppers and continue cooking for 5 minutes until they are soft.

  4. Add ham, salt and pepper and stir to combine.

  5. Make 4 wells in the potato mixture and crack an egg in each one.

  6. Cover with lid and cook for 5-7 minutes or until egg whites are set.

  7. Remove skillet from heat and sprinkle parsley over the top.

  8. Serve hot.
