How To Make Rudolph’s Carrot Flapjacks

It’s always the season for merry making and nothing gets merrier than a full stomach. These Christmas recipes will do the trick for happy smiles and bellies. Nobody goes on diet and no tummy goes hungry during Christmas!

Ingredients

  • 1 cup grated carrots
  • 2 eggs
  • 1 cup flour
  • 1/4 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup milk
  • 2 tbsp melted butter
  • Maple syrup, for serving

Instructions

  1. In a large bowl, whisk together the eggs, grated carrots, melted butter, and milk.

  2. In a separate bowl, mix together the flour, sugar, baking powder, cinnamon, nutmeg, and salt.

  3. Gradually add the dry ingredients to the wet ingredients and stir until just combined.

  4. Heat a non-stick pan or griddle over medium heat and lightly grease with butter or cooking spray.

  5. Pour 1/4 cup of batter onto the pan for each flapjack and cook for 2-3 minutes on each side, until golden brown.

  6. Serve the flapjacks warm with maple syrup.
