How To Make Carrot Cake Fridge Flapjacks

Ingredients

  • 2 cups grated carrots
  • 2 cups rolled oats
  • 1/4 cup honey
  • 1/4 cup melted coconut oil
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp salt
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

Instructions

  1. In a large bowl, combine grated carrots, rolled oats, honey, melted coconut oil, cinnamon, nutmeg, ginger, and salt.

  2. Mix well until all ingredients are evenly combined.

  3. Stir in raisins and chopped walnuts.

  4. Line a baking dish with parchment paper and press the mixture evenly.

  5. Refrigerate for at least 2 hours, or until firm.

  6. Preheat oven to 350°F (175°C).

  7. Remove the chilled mixture from the baking dish and cut into flapjacks.

  8. Place the flapjacks on a baking sheet and bake for 20 minutes, or until golden brown.

  9. Allow to cool completely before serving.
