How To Make Aebleskiver

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 2 tbsp granulated sugar
  • 1/2 tsp salt
  • 2 cups buttermilk
  • 2 eggs, separated
  • Butter or oil for greasing the pan
  • Powdered sugar for dusting
  • Jam or maple syrup for serving

Instructions

  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt.

  2. In a separate bowl, whisk together the buttermilk and egg yolks. Gradually add the wet mixture to the dry ingredients, stirring until just combined.

  3. In another bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter.

  4. Heat an Aebleskiver pan over medium heat and add a small amount of butter or oil to each well.

  5. Pour about 1 tbsp of batter into each well of the pan. Cook until the bottoms are golden brown and crispy, then use a skewer or fork to flip the Aebleskivers over.

  6. Cook until the other side is golden brown and crispy. Remove from the pan and sprinkle with powdered sugar.

  7. Serve hot with jam or maple syrup.
