How To Make Smoked Sausage and Cheddar Beer Soup Recipe

Rich and hearty soup made with smoked sausage and cheddar cheese infused with beer.

Serves:

Ingredients

  • 1 lb smoked sausage, sliced
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 3 tbsp butter
  • 3 tbsp flour
  • 1 1/2 cup chicken broth
  • 1 cup beer
  • 1 cup milk
  • 2 1/2 cups shredded cheddar cheese
  • salt and pepper to taste

Instructions

  1. In a large pot, brown the sliced smoked sausage.

  2. Remove the sausage and in the same pot, melt the butter.

  3. Add the diced onion and minced garlic, cook for about 5 minutes.

  4. Add the flour and whisk for about 1 minute.

  5. Slowly pour in the chicken broth and beer, whisking constantly.

  6. Add the milk and return the sausage back to the pot.

  7. Let the soup simmer for about 15 minutes.

  8. Gradually stir in the shredded cheddar cheese until fully melted and smooth.

  9. Season with salt and pepper to taste.
