  • 1 cup long-grain rice
  • 1 (14 oz) can diced tomatoes
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 lb smoked sausage, sliced
  • 2 cups chicken broth

Instructions

  1. Preheat oven to 375°F.

  2. In a large bowl, combine rice, diced tomatoes (including juice), chopped green bell pepper, chopped onion, minced garlic, sliced smoked sausage, and chicken broth.

  3. Pour mixture into a 9×13 inch baking dish.

  4. Bake for 45-50 minutes until rice is tender and liquid is absorbed.
