Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 smoked sausage, sliced
  • 2 cans of white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped

Instructions

  1. In a large pot, sauté onion and garlic in olive oil over medium heat until softened.

  2. Add sliced sausage and cook for 5 minutes.

  3. Stir in white beans, chicken broth, smoked paprika, salt, and pepper.

  4. Simmer soup for 20 minutes.

  5. Garnish with fresh parsley.
