How To Make Sweet Potato and Black Bean Chili

Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 sweet potatoes, peeled and diced
- 1 red bell pepper, diced
- 1 jalapeno pepper, seeded and minced
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups vegetable broth
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (14 ounces) diced tomatoes
- 1 cup frozen corn
- 1/4 cup chopped fresh cilantro
- Optional toppings: shredded cheese, sour cream, sliced green onions
Instructions

Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent and fragrant, about 5 minutes.

Add the diced sweet potatoes, red bell pepper, and jalapeno pepper to the pot. Stir in the cumin, chili powder, paprika, salt, and black pepper. Cook for 5 minutes, until the sweet potatoes start to soften.

Pour in the vegetable broth, black beans, diced tomatoes (with their juices), and frozen corn. Stir everything together and bring the chili to a boil.

Reduce the heat to low, cover the pot, and let the chili simmer for 30 minutes, until the sweet potatoes are tender.

Stir in the chopped cilantro and cook for an additional 5 minutes.

Serve the sweet potato and black bean chili hot, with your choice of optional toppings.
