Hearty vegetarian chili made with sweet potatoes and black beans in a tomato-based broth

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 sweet potatoes, peeled and cubed
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15.5 oz) black beans, rinsed and drained
  • 1 cup vegetable broth
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheddar cheese, chopped cilantro

Instructions

  1. Heat olive oil in a large saucepan over medium heat. Add onion and garlic, and cook until softened.

  2. Add sweet potatoes, chili powder, cumin, paprika, and cayenne pepper, and stir to coat. Cook for 5 minutes.

  3. Add diced tomatoes, black beans, and vegetable broth. Bring to a simmer and cook for 30 minutes or until sweet potatoes are tender.

  4. Season with salt and pepper. Serve hot with optional toppings.
