Ingredients

  • 4 medium sweet potatoes
  • 1 can of black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 red onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Scrub the sweet potatoes clean and prick each potato several times with a fork. Place them on a baking sheet and bake for 45 minutes, or until tender.

  3. In a large skillet, heat olive oil over medium heat. Add the diced onion, red bell pepper, and minced garlic. Sauté until the vegetables are tender, about 5 minutes.

  4. Rinse and drain the black beans. Add them to the skillet along with cumin, chili powder, salt, and pepper. Cook for another 5 minutes, stirring occasionally.

  5. Once the sweet potatoes are done, cut a slit lengthwise on each potato and fluff the insides with a fork. Spoon the bean mixture over the sweet potatoes.

  6. Garnish with fresh cilantro and serve hot.
