Ingredients

  • 1 pound baby new potatoes, halved
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tbsp dijon mustard
  • Salt and pepper to taste

Instructions

  1. Boil potatoes in salted water until tender, about 15 minutes.

  2. Rinse with cold water and let cool.

  3. Add potatoes, red onion, parsley, dill, and chives to a large bowl.

  4. In a separate bowl, whisk together mayonnaise, Greek yogurt, dijon mustard, salt, and pepper.

  5. Pour dressing over potato mixture and toss to coat.

  6. Serve chilled.
