Ingredients

  • 4 salmon fillets
  • 1 lb new potatoes, quartered
  • 1 cup corn kernels
  • 1/4 cup fresh basil leaves, finely chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Season the salmon fillets with salt and pepper. Place them on a baking sheet and bake for 15-20 minutes, or until cooked through.

  3. In a pot of boiling water, cook the new potatoes until tender. Drain and set aside to cool.

  4. In a large bowl, combine the cooked potatoes, corn kernels, and chopped basil.

  5. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the basil dressing.

  6. Pour the basil dressing over the potato and corn mixture. Toss gently to combine.

  7. Serve the salmon fillets on top of the potato and corn salad. Enjoy!
