Ingredients

  • 1.5 pounds new potatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring salted water to a boil. Add the potatoes and cook until they are tender but still firm, about 15-20 minutes. Drain and let cool slightly.

  2. In a medium bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.

  3. In a large bowl, combine the potatoes, red onion, parsley, and dill. Pour the dressing over the potato mixture and gently toss until everything is well coated.

  4. Serve the potato salad immediately or refrigerate for at least 1 hour to allow the flavors to meld together.
