How To Make Zingy New Potato Salad

Ingredients
- 1.5 pounds new potatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions

In a large pot, bring salted water to a boil. Add the potatoes and cook until they are tender but still firm, about 15-20 minutes. Drain and let cool slightly.

In a medium bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.

In a large bowl, combine the potatoes, red onion, parsley, and dill. Pour the dressing over the potato mixture and gently toss until everything is well coated.
