How To Make Smoky Pork & Black Bean Tacos

Ingredients
- 1 lb pork tenderloin, sliced into thin strips
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 can black beans, drained and rinsed
- 1/2 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 8 small flour tortillas
- Optional toppings: shredded cheese, sour cream, avocado slices, salsa
Instructions

In a large skillet, heat the olive oil over medium heat. Add the pork tenderloin strips and cook until browned and cooked through, about 4-5 minutes per side.

In a small bowl, combine the smoked paprika, cumin, chili powder, garlic powder, salt, and black pepper. Sprinkle this spice mixture evenly over the cooked pork.

Add the black beans and diced red onion to the skillet with the pork. Stir well to combine and cook for an additional 2-3 minutes, until the beans are heated through.

Warm the flour tortillas in a dry skillet or in the microwave according to package instructions.

To assemble the tacos, place a spoonful of the pork and bean mixture onto each tortilla. Top with chopped cilantro and any optional toppings you desire.
