How To Make One-pot Chicken & Bacon Stew

Ingredients
- 4 chicken thighs, bone-in and skin-on
- 6 slices of bacon, chopped
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves of garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 4 cups chicken broth
- 1 cup water
- Salt and pepper to taste
- Chopped fresh parsley, for garnish
Instructions

In a large pot, cook the bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside.

Season the chicken thighs with salt and pepper. In the same pot with the bacon fat, sear the chicken on both sides until golden brown. Remove chicken and set aside.

In the same pot, add the diced onion, carrots, celery, and minced garlic. Cook until vegetables are slightly softened, about 5 minutes.

Return the chicken and bacon to the pot and add the dried thyme and rosemary. Pour in the chicken broth and water. Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until chicken is cooked through and tender.

Remove the chicken from the pot and shred the meat, discarding the bones and skin. Return the shredded chicken to the pot and season with additional salt and pepper if needed.

Serve the stew hot, garnished with chopped fresh parsley.
