These tacos are a flavorful combination of spicy black beans, crunchy taco shells, and fresh toppings.

Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 red onion, chopped
  • 1/2 red bell pepper, chopped
  • 1 jalapeno pepper, seeded and minced
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • salt and black pepper, to taste
  • 8 soft corn tortillas
  • 1 cup shredded lettuce
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled queso fresco
  • 1 lime, cut into wedges

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the onion, bell pepper, jalapeno, and garlic. Cook for 4-5 minutes, stirring occasionally, until the vegetables are tender.

  2. Add the black beans, chili powder, cumin, paprika, salt, and black pepper. Stir well to combine and cook for another 3-4 minutes, until heated through.

  3. Warm the tortillas in a separate skillet over medium heat for about 30 seconds on each side.

  4. Assemble the tacos by dividing the black bean mixture among the tortillas. Top with shredded lettuce, chopped tomatoes, cilantro, and crumbled queso fresco. Serve with lime wedges on the side.
