Ingredients

  • 1 lb pork shoulder, cut into chunks
  • 1 cup black beans, cooked and drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeno, seeded and minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup chicken broth
  • 12 small corn tortillas
  • Optional toppings: avocado, salsa, cilantro

Instructions

  1. In a slow cooker, combine the pork, black beans, onion, garlic, jalapeno, chili powder, cumin, smoked paprika, oregano, salt, black pepper, and chicken broth.

  2. Cook on low for 4 hours, or until the pork is tender and easily shreds.

  3. Using two forks, shred the pork into small pieces.

  4. Heat the corn tortillas in a dry skillet until warm and pliable.

  5. Fill each tortilla with a spoonful of the pork and black bean mixture. Top with your desired toppings.

  6. Serve hot and enjoy!
