Serves:
Ingredients
- 500g minced pork
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tsp dried thyme
- 1 tsp dried sage
- 1 tsp paprika
- Salt and pepper, to taste
- 1 pack of ready-made shortcrust pastry
- 1 egg, beaten (for egg wash)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 cup mixed salad leaves
- 1/2 cup pickled onions
- 1/2 cup cheddar cheese, grated
- 4 slices of crusty bread, toasted
Instructions
-
Preheat the oven to 180°C (350°F).
-
In a large frying pan, cook the minced pork over medium heat until browned. Remove from the pan and set aside.
-
In the same pan, sauté the onion and garlic until softened.
-
Add the cooked minced pork back to the pan and stir in the dried thyme, dried sage, paprika, salt, and pepper. Cook for another 2 minutes.
-
Roll out the shortcrust pastry and line a greased pie dish with it. Spoon the minced pork mixture into the pie dish.
-
Cover the pie with another layer of pastry and seal the edges. Brush the top with beaten egg for a golden crust.
-
Bake in the preheated oven for 40-45 minutes, or until the pastry is golden and crispy.
-
In the meantime, prepare the ploughman’s salad by arranging the cherry tomatoes, cucumber, mixed salad leaves, pickled onions, and grated cheddar cheese on a platter.
-
Serve the Porkie Pie Ploughman’s alongside the ploughman’s salad and toasted crusty bread.
