Ingredients

  • 8 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced ham
  • 1/4 cup diced red onion
  • 1/4 cup diced bell pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced pickles
  • 1/4 cup sliced black olives

Instructions

  1. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.

  2. Heat a non-stick skillet over medium heat and spray with cooking spray.

  3. Pour the egg mixture into the skillet and cook for 2 minutes or until the edges start to set.

  4. Sprinkle the cheese, ham, red onion, bell pepper, and parsley evenly over one half of the omelette.

  5. Fold the other half of the omelette over the filling and cook for an additional 2-3 minutes or until the cheese is melted and the omelette is cooked through.

  6. Slide the omelette onto a cutting board and cut into 4 wedges.

  7. Serve the omelette wedges topped with diced tomatoes, sliced pickles, and sliced black olives.
