Ingredients

  • 4 slices of crusty bread
  • 200g cheddar cheese, sliced
  • 4 slices of ham
  • 2 tomatoes, sliced
  • 1 apple, sliced
  • 4 pickled onions
  • 4 hard-boiled eggs, halved
  • Lettuce leaves, for serving
  • Chili Jam:
  • 4 red chilies, deseeded and finely chopped
  • 2 cloves of garlic, minced
  • 1 thumb-sized piece of ginger, grated
  • 200g sugar
  • 150ml apple cider vinegar
  • 1 tsp salt
  • 1 tsp chili flakes

Instructions

  1. In a saucepan, combine the chopped red chilies, minced garlic, grated ginger, sugar, apple cider vinegar, salt, and chili flakes. Bring to a boil, then reduce heat and simmer for 20 minutes until the mixture thickens into a jam-like consistency. Let it cool.

  2. Toast the slices of crusty bread and set aside.

  3. Assemble the ploughman’s platter by layering cheddar cheese, ham, tomatoes, apple slices, pickled onions, and hard-boiled egg halves on each slice of toast.

  4. Drizzle a generous amount of chili jam over the toppings.

  5. Serve with lettuce leaves on the side.
