Serves:
Ingredients
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup unsalted butter, cold and cubed
- 1/2 cup sharp cheddar cheese, grated
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 1/2 cup buttermilk
- 1 egg, beaten (for glazing)
- Pickles, cheese, and ham for serving
Instructions
-
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
-
In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper.
-
Add the cold butter to the flour mixture and use your fingers or a pastry cutter to rub it into the flour until it resembles coarse crumbs.
-
Stir in the grated cheddar cheese, chopped parsley, and green onions.
-
Make a well in the center of the mixture and pour in the buttermilk. Mix until just combined.
-
Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
-
Roll the dough out into a 1-inch thickness and use a round biscuit cutter to cut out scones.
-
Place the scones on the prepared baking sheet, brush the tops with the beaten egg, and bake for 15-20 minutes, or until golden brown.
-
Remove from the oven and let cool slightly before serving with pickles, cheese, and ham.
