How To Make One-pot Roast Pork Chops with Fennel & Potatoes

Ingredients
- 4 bone-in pork chops
- 2 fennel bulbs, sliced
- 4 medium potatoes, peeled and diced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions

Preheat oven to 375°F (190°C).

In a large skillet, heat olive oil over medium heat. Season pork chops with salt and pepper, then sear for 3-4 minutes on each side until browned. Remove from skillet and set aside.

In the same skillet, add fennel, potatoes, garlic, thyme, rosemary, salt, and pepper. Sauté for 5 minutes until fennel and potatoes begin to soften.

Transfer the fennel and potatoes to a baking dish. Place the seared pork chops on top.

Cover the dish with foil and bake for 40 minutes, or until pork chops are cooked through and potatoes are tender.

Remove from oven and let rest for 5 minutes before serving. Enjoy!
