Ingredients

  • 4 pork chops
  • 2 cups of broad beans, shelled
  • 1 pound of Jersey potatoes, peeled
  • 1/4 cup of fresh mint leaves
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Season the pork chops with salt and pepper on both sides.

  3. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the pork chops for 3-4 minutes on each side, until browned. Transfer the pork chops to a baking sheet and roast in the oven for 15-20 minutes, or until cooked through.

  4. While the pork chops are roasting, bring a pot of salted water to a boil. Add the broad beans and cook for 3-4 minutes, until tender. Drain and set aside.

  5. In the same pot, boil the Jersey potatoes until tender, about 15 minutes. Drain and return to the pot.

  6. Add the cooked broad beans, mint leaves, minced garlic, remaining olive oil, salt, and pepper to the pot with the potatoes. Mash everything together until well combined and slightly chunky.

  7. Serve the roasted pork chops with the broad bean and minted Jersey smash.
