How To Make Potato and Bacon Salad
A delicious combination of crispy potatoes and smoky bacon in a creamy dressing.
Serves:
Ingredients
- 5 medium-sized potatoes, diced
- 6 strips of bacon, chopped
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tbsp Dijon mustard
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- 2 green onions, thinly sliced
- Salt and pepper, to taste
Instructions

Preheat oven to 425°F.

In a large bowl, toss potatoes with 1 tbsp of olive oil and a pinch of salt. Roast in oven until crispy, about 20-25 minutes.

In a skillet over medium heat, cook chopped bacon until crispy and golden. Remove from heat and let cool.

In a small bowl, whisk together mayonnaise, sour cream, Dijon mustard, apple cider vinegar, and honey.

In a large bowl, mix together roasted potatoes, cooked bacon, green onions, and dressing until everything is evenly coated. Season with salt and pepper to taste.

Chill in the refrigerator for at least 30 minutes before serving.
