How To Make Avocado and Bacon Salad

A refreshing salad with crisp bacon, ripe avocado, and fresh greens.

Serves:

Ingredients

  • 4 slices bacon, diced
  • 2 avocados, diced
  • 4 cups mixed greens
  • 1/4 red onion, thinly sliced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper, to taste

Instructions

  1. Cook diced bacon in a pan until crispy. Remove from pan and place on paper towels to drain excess fat.

  2. In a large bowl, combine mixed greens, diced avocado, sliced red onion, and halved cherry tomatoes.

  3. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper. Pour dressing over the salad and toss to combine.

  4. Top salad with crumbled feta cheese and crispy bacon. Serve immediately.
